Fit It In: Raw Foods

Eating raw foods brings you a
number of health benefits. Cooking
food depletes vitamins and
destroys enzymes which aid in
digestion and help defend the body
against inflammation. By eating
more raw foods, you are supporting
your immune system while
providing some of the water your
body needs.
Raw foods already have the perfect balance of fiber, nutrients, and water, and are full
of life!
Good nutrition is the foundation of good health. We all need the four basic nutrients —
water, carbohydrates, proteins and fats. We all need vitamins, minerals and other
micronutrients to supplement what our food sources don’t provide.
Seek to buy organic raw produce. They provide good minerals from the soil and you
will avoid the ingestion of chemicals including pesticides and chemical fertilizers.
Always wash your fresh produce.
Here is a recipe for a fresh salad that is perfect for winter:
1 medium beet
1 medium carrot
1/4 head of cabbage (red looks great in this salad)
1/2 medium apple
Shred the beet, carrot, and cabbage in a food processor and slice the apple into bite
sized pieces. Toss all ingredients together with a dressing of your choice or use poppy
seed or raspberry vinaigrette. Enjoy!
By starting with this recipe you are on the way toward introducing your body to raw
foods. It wasn’t that hard was it? Think of other foods you can eat raw and start
experimenting with more dishes. I have heard that if you eat one cup of raw carrots a
day, you will prevent cancer.
